Cheesy Bison Turnovers

Ingredients

  • 1 pkg refrigerated pizza dough (13.8 oz)
  • 3/4 cup bison sausage—pepperoni seasoned
  • 3/4 cup grated mozzarella cheese
  • 1/2 cup pizza sauce
  • 2-3 green onions, sliced
  • Milk
  • 1/4 cup grated Parmesan cheese
  • Pizza sauce


Directions

  • Preheat oven to 400°F/200°C
  • Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the pizza dough and cut into 9 5-inch squares.
  • Make the filling by mixing the bison sausage, mozzarella cheese, ½ cup pizza sauce, and green onions.
  • Place the filling evenly on the squares of dough, fold each square to make a triangle and seal the edges. Make small steam vents in the top of each turnover with a fork.
  • Put the turnovers on the baking sheet, brush with milk, and cover the top with parmesan cheese.
  • Bake for 15 minutes or until the dough is golden brown. Heat the remaining pizza sauce for dipping and enjoy!
Bison Shepherds Pie

Ingredients

  • 3 large yellow potatoes
  • 1 tbsp butter
  • 1/2 cup milk
  • 1 tbsp Parmesan cheese
  • 1/4 tsp fresh rosemary, chopped
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 lb ground bison
  • 1 cup yellow onion, chopped
  • 1 cup carrots, chopped
  • 3 garlic cloves, crushed
  • 1/2 cup peas
  • 1/4 cup red wine
  • 1 tsp Worcestershire sauce
  • 1/2 cup chicken broth
  • 1 1/2 tsp fresh thyme
  • 1 1/2 tsp fresh sage
  • 1/4 tsp salt
  • 1 tbsp olive oil


Directions

  • Heat oven to 400 degrees
  • Bring a large pot of salted water to boil
  • Peel and chop potatoes
  • Boil potatoes for 15 minutes, or until soft
  • Drain off liquid
  • Add the strained potatoes back to the pot
  • Add butter, milk, parmesan, rosemary, garlic, salt, and pepper
  • Mash potatoes until smooth
  • Season to taste
  • Set aside while you prepare the filling
To make the meat filling…
  • Chop the onion, carrots, garlic
  • In a large oven-safe pan, heat oil over medium heat
  • Add onion, carrots, and garlic along with salt
  • Stir and cook for five minutes
  • Add meat to pan
  • Stir to break into small pieces
  • Chop the thyme and sage into small pieces
  • Add the herbs to the pan
  • Add wine, Worcestershire sauce, chicken broth and peas
  • Cook uncovered for 5 minutes
  • Once the meat is no longer pink, season to taste
  • Turn off heat to pan. Keep oven hot.
  • Spread meat mixture evenly across the bottom of the pan
  • Scoop the potatoes on top of the meat mixture
  • Spread the potatoes evenly over the meat mixture with a large spoon
  • Place the uncovered pan in the middle of the oven
  • Bake for about 20 minutes
  • To get a nice golden top, broil for the last few minutes
Bison Stir Fry

Ingredients

  • 2 (8-9 ounce) bison ribeye steaks
  • 1 1/4 cups beef broth
  • 1/2 cup teriyaki sauce
  • 2 Tbsp cornstarch
  • 1 tsp fresh ginger, grated
  • 1/2 tsp crushed red pepper, divided (optional)
  • 1 Tbsp sesame oil
  • 2 cups broccoli florets
  • 1 cup sliced carrots
  • 1 cup chopped bell pepper, any color
  • 1 cup sliced mushrooms
  • 1 (8 ounce) can of bamboo shoots, drained
  • Cooked brown rice
  • 1/4 tsp toasted sesame seeds


Directions

  • Slice the bison steak into thin strips (Hint: partially freeze first for easier cutting)
  • In a bowl, mix the broth, teriyaki sauce, cornstarch, ginger, and ¼ of the crushed red pepper.
  • Heat oil in a skillet/wok. Add broccoli, carrots, bell pepper, mushrooms, and bamboo shoots, and cook for a few minutes. Set vegetables aside.
  • Add bison a few at a time to the center of the wok/skillet and cook until a little pink in the middle. Push to the side and add remaining strips.
  • Add the sauce to the middle of the pan and bring to a simmer until thickened. Add the vegetables and mix in the bison. Cook, stirring constantly for a few minutes.
  • Serve over cooked rice. Garnish with crushed red pepper and toasted sesame seeds.
slow cooker roast bison

Ingredients

  • 2 cans mushroom soup
  • 1 package dried onion soup
  • 1 1/4 cups beef broth
  • 5 1/2 pounds bison roast
  • 1 can mushrooms
  • flour
  • garlic powder


Directions

  • Flour roast with flour, gralic powder, salt and pepper
  • Brown roast in a frying pan on all sides
  • Combine roast and all remaining ingredients in slow cooker
  • Cook on high heat for 3-4 hours or on low heat for 8-9 hours
