Pulled Pork Sandwiches

Ingredients

  • 1 Tbsp brown sugar
  • 1 Tbsp paprika
  • 2 tsp garlic powder
  • 1 tsp pepper
  • 1/2 tsp salt
  • 3 Tbsp Dijon mustard
  • 2 lbs pork shoulder roast with the rind removed
  • 1/4 cup BBQ sauce
  • 6 hamburger buns


Directions

  • Preheat oven to 250°F/120°C
  • Combine the sugar, paprika, garlic powder, pepper, and salt
  • Place a rack in a shallow baking dish lined with tinfoil or parchment paper
  • Place the roast on the rack in the baking dish
  • Spread the Dijon mustard over the roast and then sprinkle with the sugar and spice mixture
  • Bake until very tender—about 9 or 10 hours
  • Cool, then use two forks to shred the roast
  • Stir barbeque sauce into pork, serve on hamburger buns
